A few nights ago we had some amazing Tex-Mex Quinoa. I was excited to eat the leftovers for lunch, but Hunter took it one step further by turning his quinoa lunch into tacos. They are so delicious, I just had to share them with you.
Tex-Mex Quinoa Tacos
Serves 2
1 cup leftover Tex-Mex Quinoa
4 flour tacos
1/2 avocado, chopped
1 lime, sliced into quarters
1/8 cup montereray jack cheese
1. Remove any avocado peices in the leftover quinoa.
2. Reheat the quinoa (microwave on high for 45-60 seconds or warm in a saucepan).
3. Warm the tortillas according to package instructions.
4. Place 1/4 cup of quinoa in each taco. Top with fresh avocado peices and cheese. Serve with lime wedges.
